Easy Baking for the Baking Inept

Now, I am completely awful at all things baking and cooking and I am sure many other people are as well. Most of my cooking comes from the freezer or a box, with simple easy to follow directions and not much room to mess up. There is one thing though that I have figured out how to bake and make perfectly, basically because it is one of my all-time favorite foods. So folks, here is a recipe for some homemade banana bread and it might look intimidating to make at first (especially for those who are not gifted in the art of cooking/baking like myself), but it’s not so hard and it is definitely worth it. Because let’s be honest, not much beats homemade banana bread. This recipe is courtesy of the Better Homes & Garden’s cookbook, with a little twist to make it my own. Hope you enjoy!

Ingredients for Bread

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 2 eggs, beaten
  • 1 ½ cups mashed banana (5 medium)
  • 1cup sugar
  • ½ cup cooking oil or melted butter or margarine

 

Directions (Makes 1 Loaf)

  1. Preheat oven to 350 degrees. Grease bottom and sides of pan. In a large bowl combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Make a well in center of flour mixture.
  2. In a medium bowl combine eggs, banana, sugar, and oil. Add egg mixture all at once to flour mixture. Stir all ingredients together, batter should be lumpy. Pour half the batter into the pan, add a little bit of brown sugar topping over batter. Pour the rest of the batter into the pan, add the rest of the brown sugar topping on top.
  3. Bake for 55 to 60 minutes or until a wooden toothpick inserted near center comes out clean (if necessary, cover loosely with foil the last 15 minutes of baking to prevent overbrowning). Let sit for 10 minutes then remove from pan and enjoy!

Ingredients for Topping

  • ½ cup packed brown sugar
  • 6 tablespoons all-purpose flour
  • 4 tablespoons butter

Directions for Topping

  1.  In a small bowl combine brown sugar and flour. Using a pastry blender or fork, cut in butter until mixture resembles coarse crumbs. Put on top of bread batter.
  2. Topping can also be used in the middle of bread batter to add some gooey goodness in the center of the bread.
